BERLIN BEST CURRY WURST

E se durante il percorso vi è venuta fame…Troverete dovunque lo streetfood più popolare di Berlino: Il currywurst, servito in ciotole ‘usa e getta’ per essere mangiato caldo direttamente in strada, con o senza patatine fritte.E’ nato nel dopoguerra, in un chiosco di Charlottenburg, grazie a una certa Herta Heuwer che si divertì a speziare una salsiccia grigliata con ketchup e curry, ignara che sarebbe diventato il piatto più popolare negli imbiss berlinesi e amato in tutta la Germania.A Berlino  il currywurst è venduto in numerevoli bancarelle distribuite in tutta la città, da Wittys Organic Food a Schöneberg fino al popolare Konnopke’s Imbiss a Pankownei .A Berlino anche i mercati coperti sono diventati luoghi di street food, dove sono disponibili specialità appena preparate provenienti da tutto il mondo. Uno streetfood davvero gustoso, piccante al punto giusto e vagamente esotico, grazie alla salsa profumata di curry. Il segreto è proprio lì, in quel condimento rosso fuoco che innaffia abbondatemente il classico wurst, che può essere bianco (il mio preferito) o rosso.   Una salsa difficile sa realizzare ? Assolutamente no ! Ecco la ricetta originale e …buon currywurst!

RICETTA DEL CURRYWURST

Ingredienti

6 wurstel grandi, (la ricetta classica prevede quelli di vitello).Per la salsa:

  • 250 g di passata di pomodoro;
  • 250 g di ketchup;
  • 2 cucchiai di curry;
  • 1 cucchiaino di paprika dolce o piccante;1 cipolla bianca;
  • q.b. sale e pepe
  • q.b. olio di arachidi per friggere.

Istruzioni

Iniziate soffriggendo lentamente nell’olio evo la cipolla bianca tritata e aggiungete il curry e la paprika (1 cucchiaino di curry e 1/2 cucchiaino di paprika a testa) dopodiché aggiungete la passata di pomodoro, il ketchup, le spezie e un pizzico di sale.Lasciate cuocere versando lentamente anche due mestoli di acqua calda finché la salsa non avrà preso la giusta consistenza.Sbollentate i wurstel per 5-6 minuti in acqua bollente, scolateli e grigliateli su una piastra. Tagliateli a rondelle e serviteli ricoperti con la salsa di pomodoro speziata.Se volete seguire la tradizione, accompagnateli da patatine fritte calde.

Currywurst is a really tasty street food, spicy at the right point and vaguely exotic, thanks to the scented curry sauce. The secret is right there, in that fiery red condiment that abundantly waters the classic wurst, which can be white (my favorite) or red. Can a difficult sauce make? Absolutely not ! Here is the original recipe and … enjoy your currywurst!

RECIPE 

Ingredients

6 large frankfurters (the classic recipe calls for veal ones).For the sauce:

250 g of tomato puree;250 g of ketchup;2 tablespoons of curry;1 teaspoon of sweet or spicy paprika;1 white onion;q.s. salt and pepperq.s. peanut oil for frying.

Instructions
Start by slowly frying the chopped white onion in extra virgin olive oil and add the curry and paprika (1 teaspoon of curry and 1/2 teaspoon of paprika each) then add the tomato puree, ketchup, spices and a pinch of salt. .Let it cook by slowly pouring two ladles of hot water until the sauce has the right consistency.Blanch the sausages for 5-6 minutes in boiling water, drain and grill them on a plate. Cut them into slices and serve covered with the spiced tomato sauce.If you want to follow the tradition, accompany them with hot fries.!
