NEW YORK CHEESECAKE
For 6 people
For the base:
300 g digestive biscuits
For the filling:
500 g Philadelphia
150 g Sour cream
1 teaspoon of vanilla extract
Put the biscuits in the mixer and crumble them completely. If you don’t have a mixer, you can put them in a plastic bag and then ‘mash’ them until you get a kind of flour.
Melt the butter, add it to the biscuits, mix well and stick to the bottom and sides of a 22 cm diameter springform pan, previously spread with butter. Put in the fridge.
Beat egg and sugar vigorously in a bowl, add Philadelphia and mix well. In a bowl, beat sour cream, sugar and vanilla which you will add to the rest of the filling. Pour everything on the biscuit base, level and cook in the preheated oven at 160° for about 1 hour. Let it cool and put it in the fridge for at least 3 hours.
